Maximum amount I've used is 1.2 kg flour (all-purpose) + other ingredients + 0.6~0.7kg water. But the mixing sound didn't make me feel comfortable. Therefore for this type of dough I mixed < 12 min total, from Speed 1 (1~2 min) to Speed 6 (9~10min). Hope this help. I still like KitchenAid..... the stainless bowl, mixing hook....look more professional. I used it for 2+ years. Maximum amount I’ve used is 1.2 kg flour (all-purpose) + other ingredients + 0.6~0.7kg water. But the mixing sound didn’t make me feel comfortable.
